Twenty-One Courses Later
> Begin the meal in a darkened room, so it’s all about the tastes and textures, then move on to the light room, where it’s all about the presentation and the theatre – amazing idea!
The Test Kitchen was one of the best food experiences of my life. When my girlfriend and I booked our South African adventure, beginning in Cape Town, we’d each checked the restaurant’s website multiple times a day for almost two months to get a reservation. No luck! So we decided on the sister restaurant, The Short Market Club, instead.
However, after checking into The Twelve Apostles and mentioning this to the concierge, he got straight on the phone and managed to get us a booking, at The Test Kitchen’s kitchen counter – which turned out to be the best seat in the house.
These are the dishes from The Light Room only (because The Dark Room was, yes, dark), which are served by the chefs who cook them – a very cool touch I thought.
